My low beam lamp burned out, so I thought this would be simple to replace. On inspection, I found the connector charred, so I bought a new one in addition to the lamp. Every time I tried to strip the insulation off of the exiting wire, it was so brittle, I cut right through the wire. What's the best way to make a connection into an existing wiring harness? (I'm new at this.)

If you want to try to fix it properly you can remove the headlight assembly.Then remove the glass from the outside and then repair the wiring from there.
That would be the best way so you have new wires in there.You can also install heavier wires so they will last longer.
