I have a 2001 V70 T5 which is running perfect with 75,000. I am thinking it is about time to change shocks. I am considering Bilsteins, and there is an Eibach Spring package which lowers the vehicle roughly an inch. I had an older Volvo which I lowered and it made it pretty hard on rough surfaces. My mechanic suggested changing the springs when I do the shock and strut. I was wondering if it would be fine to leave the existing stock springs on there at this point in it's life and just change the shocks. I like the ride as is, and I know pretty much what the lowered spring package feels like, especially on choppy roads,etc. Anyone who has experience in this, I would greatly value your opinion on this.

You would be fine just replacing the shocks/struts. If you want it to look lower and corner a little better than go for the springs.
